This is the starter we’ll be having for our Christmas dinner. It’s quick and easy to prepare, the ingredients are easy to source and it’s not too filling before the main event. It’s best prepared at the last minute, but it’s quick to assemble so don’t be deterred by that!
The salad has a drizzle of cocktail sauce poured over it and this may be prepared earlier and kept refrigerated until you need it. This quantity should be enough for 3 or 4 people, but just increase the quantities if you like lots of sauce!
You will need:
5 tablespoons of mayonnaise
1 tablespoon of tomato ketchup or tomato puree
½ a tablespoon of Worcestershire sauce
½ a tablespoon of lemon juice
¼ of a teaspoon of celery salt (this adds a nice flavour, but just miss it out if you don’t have any)
salt to taste
Just mix all of the sauce ingredients together and put to one side whilst you prepare the rest of the salad
Per person you will need:
half an avocado
a sliced ripe tomato
3 or 4 prawns
a few spinach or mixed leaves
Gently steam the prawns for a minute or two until they turn pink. In the meantime, slice the tomato and avocado. When all the ingredients are ready, assemble the salad ingredients onto plates however you fancy and then drizzle the cocktail sauce over the top. A sprinkling of chilli powder and a sprig or two of chives finish the dish off nicely!
